Italian Bean Salad

Thy word is a lamp unto my feet, and a light unto my path.  (Psalm 119:105)

Italian Bean Salad
This salad is full of flavor, protein, easy to make and free of gluten. 


15 Ounces Garbanzo Beans (1 can)
15 Ounces Black Beans (1 can)
2 Cups Chopped Cherry Tomatoes
3-4 Green Onions Chopped
1 1/2 Cups Parsley, Finely Chopped
1 Large Lemon, Juiced
3 Tablespoon Extra-Virgin Olive Oil
2-4 Cloves Minced Garlic
2 Tablespoons Parmesan Cheese
Salt and Pepper to Taste


Drain and rinse canned beans and place in large bowl.  Chop tomatoes, green onions, parsley and add to beans.  Salt and pepper bean mixture.

In a separate bowl, combine lemon juice, olive oil, garlic and parmesan cheese.  Whisk together and then add to beans and tomatoes to cover mixture completely.  Sprinkle a little extra parmesan cheese if desired.  Chill completely prior to serving.  Enjoy!
